Where did this week go?? I have a couple posts waiting in the queue but no pictures (oops) so I’m going to hold off on posting them… great stretching post and a yummy Greek quinoa salad coming your way next week 🙂
Closing in on two weeks out from my first Olympic triathlon so the blog and instagram will probably be flooded with triathlon stuff (like the awesome picture I found to include with this post- inspiration at its finest)! I’m excited and nervous but definitely think I’m feeling ready!
This weekend Pat (the husband) is in Toronto but I have two awesome friends visiting me… and they are both RDs so I can talk nutrition all weekend, yay! Also one is vegan and gluten free so sometimes finding places to eat can be a challenge! I made a surprise ice cream cake for us to celebrate 4 years of being Registered Dietitians (and because it is delicious) but it was a huge challenge to find all vegan and gluten free products- well it was mostly difficult finding vegan and gluten free oreos (come on whole foods)! I’m sure many people with food allergies or intolerances or special diets have these problems, I’ll eat anything and everything so I’m always down for whatever. I will try to post most our meals on insta so you can follow along for any ideas/suggestions for yourself!
