Healthy carrot cake bars are a fiber filling snack, protein packed dessert, and whole grain breakfast option for anyone trying to eat more whole and nutrient dense foods.
This week in my newsletter I encouraged my wellness challenge participants to incorporate more whole, nutrient dense foods into their diet. This means eating foods in their whole and natural form. Obviously many foods are processed to some degree so we want to try to chose the ones that are as little processed as possible. (Although it’s totally okay to eat processed foods sometimes- they just shouldn’t be your first choice the the majority of the time). So anyways… I thought including a healthy and delicious recipe full of whole food nutrition would be the best way to motivate them. These healthy carrot cake bars include whole grains, fruit, vegetables, vitamins, minerals, protein, and fiber. Plus they are delicious! They are healthy enough for breakfast and tasty enough for dessert but I usually enjoy them for breakfast. As sort of a healthier twist on carrot cake they do not disappoint. For some extra flavor top these healthy carrot cake bars with icing- Perfect for your valentine that loves a non-chocolate dessert!!
