Snack attack time! I know that sweet potato season is pretty much over but I like to eat them year round… too good to not enjoy all year! This is a healthy version of muffin tops, lots of protein, veggie based, white flour free. Gluten free and could possibly be made into vegan with an egg substitute, but I’m not sure. So just a quick and easy recipe for you guys today!
1 (baked or microwaved) sweet potato or yam
3 TBSP protein powder
¾ cup peanut butter
1 tsp. cinnamon
½ cup chocolate chips/cacao nibs (optional)
1. Mix all ingredients except chocolate chips, make sure egg is well beaten in mixture.
2. Fold in chocolate chips
3. Fill regular sized muffin pan about half way with mixture
4. Bake at 350 for 12-15 minutes.
A simple veggie based delicious treat with a protein punch! Great for snacks, pre and post workout, breakfast, whatever you like! Are you still eating sweet potatoes or is it just me??
