Did you know that May is Celiac Awareness Month?? While I generally don’t support a gluten free diet medical conditions such as celiac make it absolutely necessary. Celiac disease is a genetic autoimmune disease which damages the small intestine, affecting proper nutrient absorption. In the U.S. approximately 3 million people have celiac disease; 21 million people have this disease or are sensitive to gluten. Of the 3 million who have this disease only 5% know they have it, which is why bringing awareness is so important. In fact, I had a friend that was diagnosed a year ago in her thirties, so it’s important to be an advocate for your own health and if something doesn’t feel right- seek out medical help.

To round out May I’m sharing my favorite gluten free recipes from the blog to support Celiac awareness. Luckily there are many gluten free options widely available today and some of them you can’t even tell the difference between it and it’s gluten filled counterpart.

You will find white flour in my home, but I more frequently use almond flour in baking because I love the nutty taste. Coconut flour and garbanzo bean flour are also fun ways to change it up and add some extra flavor or fiber to your food. Many restaurants now also have gluten free options or special menus. I was dining out with a gluten free friend earlier this month and she ordered a burger and they even had the option of a gluten free bun.
