Vegan and Sugar Free Breakfast Cookies- two ways

This month’s Recipe Redux prompt is to break out of breakfast boredom!
Cooks aren’t always pressed for time in the mornings – they just need new ideas. Think mug cakes, smoothie bowls, breakfast cookies and more. Show us the healthy way you wake up your breakfast – or wake up just for breakfast!

Yay for breakfast foods! While I enjoy both a savory and sweet breakfast I tend to lean a little more towards sweet. In an effort to cut down on sugars (maple syrup, coconut sugar, etc.) I wanted to make breakfast cookies that were completely naturally sweetened- enter date paste! To make date paste you soak dates in warm water, remove pits, and puree just the dates, saving the date water and adding it gradually until you have a nice paste like consistency. These cookies are a very satisfying and just the right amount of sweet to start to the day. Try the chocolate chip if you’re more traditional or chai if you’re feeling a little more creative.

Ingredients:
¼ cup date paste
½ cup almond butter
¼ cup applesauce
1 cup oats
1 tsp baking powder
½ tsp salt
¼ tsp cinnamon
1 tsp vanilla extract

​For Chai Spiced Cookies:
¼ tsp cardamom
¼ tsp nutmeg

​For Chocolate Chip Cookies:
¼ Cacao nibs or chocolate chips
¼ cup walnuts

​​Directions:
1. Soak dates for at least 1 hour and then make date paste- seek instructions above.
2. Combine all ingredients and spoon onto greased baking sheet
3. Bake at 350 for 15 minutes
4. Allow cookies to cool and eat warm or freeze. Store in freezer or fridge.
