Forget spring I’m ready for summer!!  Ok let’s not forget spring but I’m definitely over winter. I’m ready for spring and summer fruits and veggies galore! I’ve been craving blueberries lately but I know that I don’t enjoy their taste as much when they aren’t in season.  They just lack that juicy sweetness. So I decided to create something to satisfy my blueberry craving and added some juicy sweetness. This is by far one of my most simple recipes. You could double it easily or cut in half depending on what you plant on using it for… I have just been eating it as a spread on sandwiches, rice cakes, or waffles. Have you ever made your own jam?? Are you familiar with the superfood chia seed??

Ingredients:

12 oz blueberries

¼  cup chia seeds

¼ maple syrup

Directions:

1.       Heat blueberries and maple syrup in a pot on the stove top for 10-15 minutes or unit blueberries start to burst

2.       Add chia seeds and mix thoroughly and cook for another 10 minutes or so until the jam thickens to your desired consistency

3.       When done, store in Mason jar in fridge for 1-2 weeks.

**Just to note you can use frozen blueberries you will just have to add more cooking time to get the blueberries to burst and cook down.

This jam can be used a spread on a sandwich, as a filling or topping on baked goods, mixed with some balsamic for a savory sweet sauce, on top of pancakes/waffle, and much more! Be creative and enjoy!
