Chocolate Avocado Pudding is a healthy spin on traditional chocolate pudding. It eliminates the gross packaged pudding and uses healthy fat from an avocado, and natural sweetener.
1 ripe avocado,
1 and ½ cups milk,
1/4 cup cocoa powder
2 TBSP honey (can also use 1-2 packets of stevia to sweeten)
1) Measure ingredients, for the milk and sweetener- add gradually, use more/less depending on taste and desired thickness, remember you can always add more later.
2) Blend to combine
3) Chill for at least 1-3 hours or overnight.
Avocados are amazing in so many foods and very nutritious! Some other creative ways to use avocado includes: replacing a banana in a smoothie, grilled, baked with eggs, a hummus style dip, on topping on non-Mexican foods, a creamy sauce, homemade ice cream, and of course by itself!
