When temps get high, cool off with this healthy and delicious green based smoothie!
How was your Memorial Day Weekend? I headed to the Burgh to see family and friends. I couldn’t believe we were seeing temps into the 90’s in May. I mean it’s happened before but sometimes it’s in the 60’s at the end of May. Anyways this smoothie is full of fruits and vegetables, with the addition of ginger and fresh mint its super refreshing. One of my goals this summer is to up my fruit intake- I love my veggies but some fruits are super sour or too sweet for me. Smoothies are a great way to incorporate fresh and frozen fruits this summer so I think this recipe will be used a lot! And everything tastes better when it’s served in a copper mug- especially if it has mint in it. Think of this as a healthier take on a Moscow Mule 😉
I used this blender: http://www.brevilleusa.com/hemisphere-control.html but I have been thinking about giving it to my little sister when she moves into her 1st apartment later this summer and as an excuse to buy myself a serious upgrade. Obviously the Vitamix is really well known and has a long history but the Blendtec looks awesome. Do you have either? Which should I get?
1 apple, chopped
1 handful spinach
1 cup frozen pineapple
1 tsp lemon juice
1 tsp ginger
½ cup mint leaves
½ cup milk
- Measure, Blend, and Serve cold!
