My Favorite Spring Recipes for Diabetics rounded up into one post that is sure to help you eat healthier this spring.

I talked last week about eating seasonally so it only seemed appropriate to share some delicious seasonal spring recipes! If you missed my Earth Day-inspired post about eating seasonally and reducing food waste make sure you check it out here.

As a dietitian and someone who works with (and loves food) it’s so important to be aware of how what we eat can change environmental issues. As human beings, we must do our part to protect the environment. What we eat affects the environment by how much emissions of greenhouse gases are released, which contribute to climate change.

Climate change is a huge issue and one of the best things we can do is to eat less meat. No, I’m not a vegetarian but I try to eat as plant-based as possible such as the delicious and nutritious seasonal recipes listed below- make sure you check them out and find some inspiration to do your part for the environment.

Appetizer Recipes for Diabetics: Strawberry Basil Salsa 

Appetizers can be made diabetes friendly by including complex carbohydrates (like fruit) and taking advantage of foods being in peak season. The freshness of the berries and basil limit the need for additional salt and fat.

Low Carb Appetizer for Diabetics: Stuffed Portobello Mushrooms

This would be a great recipe to make for spring or summer-it can be made on the grill or in the oven.  The high fiber content makes it excellent for blood sugar control.

Spring Salad Recipe for Diabetics: Mango Quinoa Salad

Mango is a fruit that is delicious but a pain in the butt to prepare, here’s a trick: use a pint glass rim to separate the flesh from the seed of fruit. In addition to this sweet fruit, more fresh veggies, and quinoa come together for a blood sugar balanced meal.
