Sheet Pan Eggs for Sandwiches

When it comes to crafting the perfect breakfast sandwich, sheet pan eggs are a game-changer. Layer your eggs between slices of toasted bread. If you are feeling adventurous get creative with additional toppings: creamy avocado, a dollop of tangy hot sauce, mustard, lettuce, tomato, the works.

You will be thrilled with a simple and easy breakfast that can be prepped in advance for the whole week. Portion out your eggs and then just add your bread of choice, warm up in the toaster oven for the best reheating.

I actually shared my favorite sheet pan dinner previously but that recipe and others are typically more dinner focused. When it comes to dinner time, the convenience and versatility of a sheet pan truly shine. Crafting a sheet pan dinner is simple and effective. Start with a single pan, lined with an array of vibrant vegetables, tender proteins, and aromatic herbs, all coming together for a delicious feast.

Eggs on a Sheet Pan

Sheet pan eggs are not only super practical for making breakfast to last all week long, they are also great for hosting guests. This pan makes enough for 6-8 breakfast sandwiches or a nice side dish of eggs to serve for a group. It’s as simple as scrambling up the eggs- adding any desired spices (plus salt and pepper to taste), baking for 12-15 minutes and then topping (optional) with cheese for some extra flavor.

I love the option of a high protein breakfast, and highly recommend it for my diabetes clients. Pair them with fiber-rich vegetables like spinach and peppers or whole-grain toast to create a balanced meal that supports stable blood sugar levels and promotes overall health.

Other healthy breakfast ideas for diabetes: (whole grain) Overnight French Toast Casserole, Tofu Scramble, Blueberry Oatmeal Breakfast Cake, and Peanut Butter and Chia Seed Jelly Oats.

Sheet Pan Eggs

Ingredients

  • 8-10 eggs
  • Spices I used Trader Joe's everything bagel spice
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese optional

Instructions

  • Grease sheet pan.
  • Whisk eggs, milk, spices, and salt and pepper.
  • Pour mixture into sheet pan
  • Bake 12-15 minutes
  • Turn off oven, top with cheese and put back in 3-5 minutes or until melted
