Goat Cheese Pasta Primavera

A veggie filled delicious pasta dish!

Ingredients

  • 8 oz pasta
  • 2 TBSP butter
  • 4 carrots thinly sliced
  • 2 bell peppers thinly sliced
  • 2 cloves garlic minced
  • 1 tsp thyme
  • 1 tsp oregano
  • 6 oz goat cheese
  • pepper and salt
  • Cooked ground turkey or chicken sausage
  • Parmesan cheese (optional)

Instructions

  • Boil water for pasta
  • Melt butter in large skillet
  • Add garlic, vegetables, and spices
  • Cook while pasta boils about 10-15 minutes or until softened
  • Before draining pasta reserve 1 cup pasta water
  • Drain pasta and add to vegetable pan
  • Add goat cheese and pasta water, mix thoroughly
  • Add salt and pepper to taste
  • Add lean protein of choice
  • Top with Parmesan cheese if desired
