This recipe is a trick and a treat! The trick is that it’s vegan, gluten free, low sugar, and paleo but you would never guess it! The treat is that it’s absolutely delicious! Forget snacking on leftover Halloween candy and make this to enjoy tonight!
Hope everyone had a great weekend… it’s so rare I have my life together enough to post on a Monday, aka I’m actually home on a weekend without it being filled with plans. I was so grateful to have a relaxing weekend at home between 3 trips in October and 3 more, plus a marathon in November. I did a lot of recipe developing and lounging. It was so needed for a mental break and for the blog.

Maybe it’s because I turned 30 this year but I honestly have zero desire to dress up myself…. although I loved seeing all the cute kids dressed up for various events this weekend. Tonight I will miss the trick or treaters since the hubs and I are heading to the Eastern State Penitentiary to visit their haunted house- it should be a blast! Everyone be safe and don’t eat too much candy!!
Pumpkin Chocolate Chip Skillet Cookie
Ingredients
- 1/2 cup almond butter
- 1 cup pumpkin puree
- 1/2 cup applesauce
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 1/2 cup brown sugar
- 2 cups almond meal
- 1 tsp pumpkin spice
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350
- Combine almond butter, pumpkin, coconut oil, applesauce and vanilla extract in a bowl, mix thoroughly.
- In separate bowl combine dry ingredients: almond meal, brown sugar, pumpkin spice, baking soda, and salt.
- Mix together both bowls and add chocolate chips.
- Pour into ungreased cast iron skillet.
- Bake at 350 to 20-25 minutes.
