The pie crust is my homemade essential star here- but the filling is just as easy, healthy, and necessary! I’ve used a similar crust in other recipes such as my veggie quiche recipe and a no bake version in one of my favorites- the chocolate coconut bars. I’ll be honest I have tried and failed many times at making authentic homemade crust- messing with the dough is a headache for me, so that’s why I went gluten free! Almond flour and coconut flour make a very simple and delicious pie crust. I’ve never made the crust and froze it, but it does refrigerate perfectly. Try this naturally sweetened crust or check out my no bake option or savory option to avoid ever buying a pie crust again!
