Vegan Sheet Pan Dinner

Ingredients

  • 1 block extra firm tofu
  • 2 medium sweet potatoes
  • 3 cup broccoli florets
  • ¼ cup soy sauce or tamari
  • 2 TBSP garlic powder
  • 2 TBSP olive oil
  • Salt and pepper to taste

Instructions

  • Press tofu 30-60 minutes.
  • Preheat oven to 400 degree Fahrenheit
  • Chop sweet potatoes, broccoli and tofu into ½ inch cubes and toss with soy sauce, garlic powder olive oil, salt and pepper
  • Put sweet potatoes in oven to start baking for 10 minutes (total cook time 40 min)
  • Add tofu to sweet potato pan and bake for additional 10 minutes (total cook time 30 min)
  • Add broccoli to pan and bake for 20 minutes (total cook time 20 min)
  • Once everything is properly browned and roasted, enjoy!
