Mango Quinoa Salad

Ingredients

  • 3 cups vegetable broth
  • cups quinoa
  • 2 mangos
  • 2 red peppers
  • ½ red onion
  • 1 cucumber
  • ½ cilantro chopped
  • 1 cup pistachios
  • Dressing:
  • ¼ c orange juice freshly squeezed if possible
  • ¼ c white balsamic vinegar
  • ¼ c olive oil
  • 1 tsp garlic powder
  • 1 tsp orange zest

Instructions

  • Cook quinoa in vegetable broth according to package directions.
  • Dice mango, red pepper, red onion, and cucumber.
  • Measure and mix together dressing ingredients.
  • Once quinoa is done cooking, allow to cool.
  • Mix in mango, peppers, onion, cucumber, dressing, and pistachios.
  • Serve cold.
