Wash and chop all the vegetables
Toss with olive oil, garlic powder, and salt/pepper to taste
Spread evenly on baking sheet
Roast at 400 degrees for ~35 minutes
Start cooking the rice while veggies are roasting
Pour 1 can of coconut milk, and curry paste, lime juice, ginger and arrowroot into pan
Mix together thoroughly before adding heat
Cook 15 minutes or until sauce starts to reduce
Combine veggies and rice, pour sauce over evenly and serve warm
