Easy Tofu Scramble

Ingredients

  • 1 block firm tofu
  • 2 cloves garlic peeled and minced
  • Olive oil
  • 1 bell pepper
  • 1 medium yellow onion
  • 8 oz bella mushrooms
  • 10 oz bagged spinach
  • 1.5 tsp turmeric
  • 1.5 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Press tofu (see blog post for instructions)
  • Dice pepper, onion, and mushrooms
  • Add olive oil to frying pan, once heated add garlic, saute 1 minute
  • Add onions and saute for 2 minutes
  • Add peppers and mushrooms saute for 2 minutes
  • Add spinach and stir until wilted
  • Crumble tofu with hands over pan, mix in spices, and stir to combine
  • Cook 3-4 additional minutes until tofu is thoroughly heated
  • Add more salt and pepper or spices if needed
  • Serve warm with avocado and bread (optional)
