Press tofu (see blog post for instructions)
Dice pepper, onion, and mushrooms
Add olive oil to frying pan, once heated add garlic, saute 1 minute
Add onions and saute for 2 minutes
Add peppers and mushrooms saute for 2 minutes
Add spinach and stir until wilted
Crumble tofu with hands over pan, mix in spices, and stir to combine
Cook 3-4 additional minutes until tofu is thoroughly heated
Add more salt and pepper or spices if needed
Serve warm with avocado and bread (optional)
