Easy tofu scramble is here!! Have you ever made tofu before?? Don’t be intimidated this recipe is super easy, full of nutrition, and very tasty!

Cooking Tofu

The first tip for cooking tofu in any form is to make sure you press it- squeeze all that water out. The easiest way you can do this is a tofu press or you can create your own.

I wrap the tofu in a clean dish towel and place a cast iron pan on top of it and usually throw some cans or whatever I have laying around the kitchen into the pan for a little extra weight. I try to press it for at least a half hour, up to an hour, obviously the longer, the more water will be pressed out.  And the more water pressed out of the tofu means more flavor can be absorbed. This is probably the most crucial and most difficult part of making easy tofu scramble.

Adding flavor to Tofu

Tofu scramble is a really easy recipe in general, you could customize the spices and veggies to your preferences. I used a more classic recipe to mimic eggs. The turmeric is key here because it’s what will give the tofu that yellow egg-like color. While tofu tends to get a back rep this recipe is truly delicious. If you follow my instructions for pressing the tofu above, it will take on the flavor of the spices used in the recipe.

Make Meal Prep Easy

Pre-chopping the veggies can make this recipe a dream for meal prep. It’s a great easy weeknight dinner because you can just throw everything into a pan and you’re done in 15 minutes or so.

Plus there’s no meat to worry about sanitation and extra cleaning. (I don’t know about you but cooking meat really grosses me out so I sanitize everything extra afterwards making clean up a pain).

The tofu can be pre-pressed and seasoned overnight as well. It you refrigerate it with any liquid it will absorb that liquid, adding a little bit of soy sauce can help with extra flavor if not cooking immediately.

Easy Tofu Scramble

Ingredients

  • 1 block firm tofu
  • 2 cloves garlic peeled and minced
  • Olive oil
  • 1 bell pepper
  • 1 medium yellow onion
  • 8 oz bella mushrooms
  • 10 oz bagged spinach
  • 1.5 tsp turmeric
  • 1.5 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Press tofu (see blog post for instructions)
  • Dice pepper, onion, and mushrooms
  • Add olive oil to frying pan, once heated add garlic, saute 1 minute
  • Add onions and saute for 2 minutes
  • Add peppers and mushrooms saute for 2 minutes
  • Add spinach and stir until wilted
  • Crumble tofu with hands over pan, mix in spices, and stir to combine
  • Cook 3-4 additional minutes until tofu is thoroughly heated
  • Add more salt and pepper or spices if needed
  • Serve warm with avocado and bread (optional)
