Healthy French Toast Casserole

Ingredients

  • 1 loaf whole grain bread cubed into 1 inch pieces
  • 2 1/2 cups milk
  • 6 eggs
  • 1/4 cup maple syrup (can use lite or sugar free)
  • 1 tbsp vanilla extract
  • 1 tbsp cardamom
  • 2 tbsp cinnamon
  • nuts and seeds (optional)

Instructions

  • Whisk together milk, eggs, maple syrup, vanilla, cardamom and cinnamon
  • Spread bread cubes evenly in 13x9 pan, pour mixture on top
  • Cover and let sit in fridge overnight
  • Top with nuts/seeds if using or a sprinkle of cardamom and cinnamon
  • Bake at 350 for 40-45 minutes the next day
  • Allow to cool 5 minutes before slicing and serving
  • Can top with additional syrup or whipped cream
