Blueberry Breakfast Cake

Ingredients

  • 2 cups blueberries fresh or frozen
  • 2 cups oats gluten free
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 TBSP chia seeds
  • 1 TBSP flax seeds
  • 1/2 cup applesauce unsweetened
  • 1 cup milk
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350
  • Measure and combine dry ingredients- blueberries, oats, cinnamon, baking powder, and seeds
  • Measure wet ingredients- applesauce, milk, eggs, maple syrup, vanilla extract
  • Combine wet and dry ingredients and stir until just mixed
  • Cook at 350 for 30-40 minutes or until set
  • Allow to cool before cutting
