Banana Oatmeal Muffins

Ingredients

  • 2 mashed ripe bananas about 3/4 cup
  • 2 tablespoons oil
  • 1 egg
  • 1/2 cup fat-free milk
  • 3/4 teaspoon vanilla extract
  • 2/3 cup flour
  • 1/2 cup quick-cooking oats
  • 1/4 cup honey/agave nectar
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 375 degrees
  • Combine all dry ingredients in a large mixing bowl
  • Combine all “wet” ingredients and add into dry ingredients
  • Mix thoroughly and poor batter into a greased muffin pan
  • Bake muffins for about 15 minutes or until a toothpick comes out clean when poked
  • Freeze muffins to have for later- to reheat, place a paper towel over the muffin and set to “defrost”, this should only be about 30 seconds on high power.
