Good morning!!!  I promise you this is one of my favorite recipes ever. These breakfast bars taste like cookie dough and I want to eat them for every meal.  It’s more of a semi cooked cookie dough but I end up eating them cold so they still have the perfect cookie dough essence. For the record- the hubs prefers warming them back up in the microwave but he also is a fanatic about this bars. Just look at those ooey gooey chocolate chips all melted and delicious. Packed with protein and great as a meal prep these cookie dough breakfast bars need to be on your list to make this weekend.

I typically prefer a sweet (vs savory breakfast) and like to change it up. I make your typical overnight oatmeal, oatmeal bakes like this blueberry one, but cookie dough breakfast bars are my new favorite. I originally planned on sharing these a healthier Valentine’s Day cookie type recipe, but I’ve been there, done that, and these bars are fit for breakfast. I’ve also taken to crumbling them on top of Greek yogurt or grabbing one as a quick afternoon snack. The peanut butter and brown rice syrup keep everything sticking together but once you bake them (and they set) they aren’t sticky and are easy to grab and go.

Cookie Dough Breakfast Bars

Ingredients

  • 1/2 cup applesauce
  • 2 eggs
  • 1 5.3 oz cup yogurt
  • 1 cup peanut butter
  • 3/4 cup brown rice syrup
  • 6 cups oats
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350
  • Combine wet ingredients (applesauce, yogurt, PB, brown rice syrup)
  • Mix in oats
  • Stir in chocolate chips
  • Spread mixture evenly into 13x9 pan
  • Bake for 20-25 minutes
