One Pan Tuscan Chicken is made for back to school and longer days! This recipe is veggie and protein loaded, plus it can be quickly made on the stove top, only dirtying one pan. Who has time for dishes this time of year??!! It’s also an easy meal to prep for on a meal prep Sunday- just wash and chop up mushrooms. Buying jarred sun-dried tomatoes and artichokes really helps save on time. This recipe was inspired by a recent review of our Italy trip last summer as we are about to head to Europe to visit a few other countries (Netherlands, Belgium, France, and Germany). The Tuscan food was the best, so fresh and delicious… we will definitely be going back to Italy one day. Don’t forget to add some carbs for balance, I’d recommend pasta or quinoa. If you want to boost the nutrition up, add spinach to the final cooking stage. One Pan Tuscan chicken is a quick, no fuss, 15 minute meal! This is my first choice for weeknights so you can get in all the other activities (like planning trips or spending those last few warmish days outside!) Currently my fall days are filled with work, a quick workout, and enjoying some down time since I’m not getting much on my weekends (traveling every weekend gets a big exhausting!)
