September-The Recipe Redux:
We love throwing ingredients together on a sheet pan and roasting for a simple sheet pan dinner. They make busy weeknights a bit more manageable. (And clean-up isn’t bad either!) Show us your healthy take on a sheet pan meal.
I actually shared my favorite sheet pan dinner earlier this winter. Personally I don’t think the veggie protein combo is much of a recipe so I wanted to create something a little more interesting and out of the box. Assuming most would be using that formula and making more traditional dinner meals I figured I would make some breakfast! I was considering an entire sheet pan pancake but decided to try something that would likely turn out a little better- sheet pan eggs!
Sheet pan eggs are not only super practical for making breakfast to last all week long, they are also great for hosting guests. This pan makes enough for 6-8 breakfast sandwiches or a nice side dish of eggs to serve for a group. It’s as simple as scrambling up the eggs- adding any desired spices (plus salt and pepper to taste), baking for 12-15 minutes and then topping (optional) with cheese for some extra flavor.
