This is a great vegetarian and vegan substitute for BBQ meat. You could even add a bun to create a sloppy joe/pulled pork slider substitute. Good simple recipe for upcoming spring and summer BBQs if ever stays warm. Since it’s Lent and I’m Catholic vegan and vegetarian options are important for Friday evenings… Do you have any religious diet restrictions?? Follow a vegan or vegetarian diet?? Have you ever used liquid smoke before?? I’m obsessed; it creates such a great flavor and pairs awesome with beans!
Ingredients:
2 TBSP olive oil
1 yellow onion, diced
2 medium tomatoes, diced
1 15 oz can garbanzo beans
2 Tsp apple cider vinegar
1 TBSP garlic powder or 1 clove garlic
2 TBSP soy sauce/liquid aminos
1 TBSP maple syrup
1 TBSP thyme
2 tsp cumin
2 TBSP liquid smoke
Directions:
1. Heat oil in skillet, add onions and cook until they become translucent
2. While onions are cooking mash garbanzo beans
3. Add herbs and liquid seasonings to mashed garbanzo beans
4. Add diced tomatoes to skillet with onions
5. Add seasoned garbanzo bean mixture to skillet
6. Cook on stovetop for about 10 minutes until evenly combined and warmed
