Pasta is probably one of my favorite foods; let’s blame my Italian heritage… I rarely eat pasta though because I tend to have a tough time limiting myself to the appropriate serving size. But when I do have it I like to make a veggie loaded marinara sauce to top it. Super easy to make and I love knowing there is no HFCS or sugar added! If only I had the ambition to make homemade pasta….
If you’re feeling extra veggie love or adventurous try vegetable noodles! I recently had been gifted a spiralizer which might be one of my new favorite kitchen appliances! I have only spiralized zucchini and sweet potato so far but it is a pretty awesome contraption. Directions are included below if you want to have extra veggieful pasta for cooking your zucchini noodles. Don’t forget the garlic bread!
Homemade Veggie Pasta Sauce
Ingredients:
1 onion
10 oz mushrooms
1 large can crushed tomatos (28 oz)
1 can tomato paste (15 oz)
1 TBSP Basil
1 tsp. thyme
1 tsp. oregano
½ tsp. cumin
2 bay leaves
**optional: add my homemade turkey meatballs
Directions:
1. Finey dice onion and mushrooms
2. Put all ingredients in crockpot and set for 4-6 hours.
3. Cook pasta according to package directions or
4. Spiralize zucchini into noodle, sauté in a little olive oil for ~5 minutes.
5. Enjoy!
